
This impressive cake is perfect for your sweetie on Valentine's Day or any special occasion! Gluten-free, even special diets can enjoy without worry. Decorate with fruit, chocolate curls, or whipped cream!
Ingredients:
Cake:
- 3 bags of Pamela's Chocolate Cake Mix
- 6 large eggs
- 1-1/2 cup oil
- 4-1/2 cups water
Frosting:
- 1 bag of Pamela's Dark Chocolate Frosting Mix
- 6 tablespoons butter or margarine, room temp/not melted
- 4 tablespoons water
Steps/Methods:
Prepare three bags of Pamela's Luscious Chocolate Cake:
Preheat oven to 350. Put all ingredients in a bowl (for this recipe you might want to mix all three bags separately to keep the batter in a more controlled size), mix by hand to incorporate. DO NOT OVERMIX. Measure the batter and divide it among three lightly greased cake pans so the layers are approximately the same height when baked.
In a 350 oven, bake for approximately 40 minutes. The cake is done when an inserted toothpick comes out with slight crumbs.
Once baked, freeze slightly and then cut each layer in half by height. Frost with Pamela's Dark Chocolate Frosting Mix, two to three bags depending on how much frosting you like. We recommend that your frosting is stiff to keep the layers from sliding around. Make this cake ahead of time, so the whole delectable thing can chill in the fridge for at least 4 hours before you cut it. If using cream and berries, add them right before serving.
Pamela's Dark Chocolate Frosting Mix:
Soften butter or margarine on medium speed. Add water and Pamela's Dark Chocolate Frosting Mix and blend together on medium for 1 to 2 minutes or until smooth. Scrap down bowl during mixing. If frosting is too thick, add more water one teaspoon at a time. Frost on cooled cake or cupcakes.
Variations:
Mocha Frosting: Add 1 tablespoon freeze-dried coffee (dry form).
Chocolate Orange Frosting: Add 1 teaspoon orange flavoring* and 2 tablespoons orange zest.
Chocolate Raspberry Frosting: Add 1 teaspoon raspberry flavoring* or more to taste. Decorate with fresh raspberries.
Chocolate & Cinnamon Frosting: Add 1 teaspoon ground cinnamon or more to taste.
