

Dandelion is famous for toning and cleansing the liver. The leaves, yellow flowers and roots are all edible.
2 cups of fresh unsprayed dandelion leaves and a few flowers (not the dead ‘wishes’)
1 cup of arugula
1 tablespoon of sliced purple onion
½ mango, sliced
2 tablespoons olive oil
3 teaspoons lemon juice
pinch of Celtic Sea Salt to taste
Toss all of the ingredients in a bowl and serve.
