Pomegranate Dressing

Ingredients

  3/4 cup R.W. Knudsen® Family Organic Cranberry Pomegranate Juice
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
2 tablespoon Santa Cruz Organic® 100% Lemon Juice
1 tablespoon Dijon-style mustard
Kosher salt or coarse sea salt and freshly ground black pepper

Directions

  1. To make the dressing, reduce cranberry pomegranate juice and balsamic vinegar by boiling5-7 minutes until thickened in a 1-quart saucepan.
  2. In a small bowl, whisk cranberry pomegranate reduction with lemon juice, olive oil, andmustard.
  3. Season to taste with salt and pepper.
