Walnut Burgers

Walnuts, rich in healthy fats and omega 3s, create a meaty texture and full hearty flavor when used in these burgers. Great made small as appetizers, too!

  • Ingredients
    • 2 tablespoons butter or olive oil
    • 2 cups soy milk
    • 2 tablespoons whole grain flour
    • 1/2 teaspoons sea salt
    • 1-1/2 cups toasted whole wheat bread crumbs
    • 2 eggs or egg replacer
    • 1/2 cup chopped onion
    • 1 teaspoon sea salt or seasoning
    • 1 cup finely chopped walnuts or pecans
    • 1 cup cooked brown rice
    • 1/2 cup chopped olives (optional)
  • Methods / Steps
    1. Blend butter (or oil), flour and salt over low heat.
    2. Stir in soy milk and cook until thickened. Simmer about 2 minutes, stirring constantly.
    3. Remove from heat.
    4. Add remaining ingredients. Mix well.
    5. Chill until firm (about 1/2 hour).
    6. Form into patties, roll in bread crumbs, and saut or bake until brown.

    Serve in buns, or with tomato sauce or mushroom gravy.
    Top with sprouts and favorite toppings.
