Roasted Vegetables

Use any vegetables you have on hand to create a delicious and nutritious dish. If you're feeling adventurous, try using different herbs and spices to create a unique flavor.

  • Ingredients
    1. Any or all of these vegetables - carrots, potatoes, squash, zucchini, celery, mushrooms, eggplant, garlic, onions, chopped into roughly the same size pieces.
    2. 3 tablespoons olive oil
    3. 1/2 teaspoon each of basil and oregano
    4. salt & pepper
  • Methods / Steps
    1. Preheat oven to 400F/200C.
    2. Combine vegetables in a roasting pan.
    3. Add basil, oregano, salt and pepper.
    4. Drizzle olive oil on top.
    5. Fill 1/3 of pan with water.
    6. Roast for about 1 hour or until vegetables are soft.
