These are super fun to make with kids or when a state fair treat comes calling! Great for tailgating or casual family events, these gluten free treats hit the spot. Use the best hotdogs you can find, or use tofu-dogs (or meat substitutes.) Try with a variety of dipping sauces.
Description
Cookies perfect for a brisk fall day or lunch bag! These cookies are gluten free (make sure you are buying your oats from a reputable company such as GlutenFreeOats.com.)
1. Melt 6oz butter in a pan, add vanilla paste and oats, and stir until cooked then set aside.
2. Cream remaining butter and baking soda on low. Add sugar and mix on medium speed until pale and fluffy consistency has been achieved. Add peanut butter.
3. Turn off mixer then add oat flour and mix on a low speed.
4. Bake at 350f until golden.
Filling:
Mix on high until incorporated. Then spread over the bottom of each cookie and sandwich together.
