Peach & Goat Cheese Salad

As summer is winding down I try to grab all of the fresh produce I can before we move into Fall. Sweet and wonderful, peaches are showcased in this changing seasons salad. This recipe is egg free, gluten free and lacto-ovo vegetarian friendly.

  • Ingredients
    • 2 oz arugula

    • 1 oz micro greens

    • 2 oz lambs lettuce

    • 2 oz butter lettuce

    • 4 oz goat cheese

    • 2 large ripe peaches, washed and diced

    • cup pine nuts

    • Salt and pepper

    • cup peach nectar

    • 1/8 cup champagne vinegar

    • cup grapeseed oil

  • Methods / Steps

    Put peach nectar, champagne vinegar, and grapeseed oil into a blender and blend for 1 minute or whisk in a medium bowl until well combined. Add salt and pepper to taste. Wash and cut all lettuce if necessary. Layer the salad with each type of lettuce with a layer of peaches, goat cheese, pine nuts and a tablespoon of dressing. Repeat until all ingredients are used.

  • Additional Tips

    You will have extra dressing left over and you can use that for another salad.
