Light Tiramisu

You can still enjoy tiramisu even if you're watching your calorie intake with this lower-fat recipe.

  • Ingredients
    • 2 teaspoons agar agar or gelatin

    • 2 tablepsoons frozen orange juice concentrate, thawed

    • 1/2 cup Sucanat or sugar

    • 1/3 cup water

    • 6 egg whites

    • 1 package light cream or1 cup yogurt cheese*

    • 1/2 teaspoon grated orange rind

    • 1/2 teaspoon vanilla

    • 2 packages soft lady fingers

    • 1 cup cold strong coffee

    • 2 tablespoons cocoa powder

    • Chocolate sticks
  • Methods / Steps

    In a small saucepan, sprinkle agar agar (or gelatin) over orange juice concentrate; cook, stirring, over low heat until dissolved. Cool.

    In another small saucepan, combine sugarand water. Cook over medium heat until syrup reaches soft ball stage (syrup dropped in cold water forms soft ball).

    In a bowl, beat egg whites until soft peaks form.Gradually pour in syrup, beating constantly until cool and very stiff. Beat in agar agar (or gelatin), beating for 30 seconds.

    In a large bowl, beat together cream cheese/tofu, yogurt cheese, orange rind and vanilla until smooth and creamy. Fold in meringue, 1/3 at a time.

    Separate lady fingers, drizzle each with coffee and arrange half in bottom of a deep 9-inch glass bowl. Cover with half of meringue mixture. Sprinkle with 1 tablespoon cocoa. Repeat layers.

    Cover and refrigerate for at least 4 hours until set.Decorate with chocolate sticks

  • Additional Tips

    * To make yogurt cheese: line a strainer with cheesecloth and place over a bowl. Measure 2 cups of 1% plain yogurt into the strainer. Cover and refrigerate for several hours. Discard liquid.
