Gluten Free Flour Blend

Gluten Free baking requires special flours and a blend is certainly the way to go for the best results. If you do not want to buy one, make this version and store it in an airtight container in the freezer for all your GF baking needs!
- Ingredients
2 cups rice flour (I use white, brown is more gritty.)
2/3 cup potato starch (not potato flour or flakes)
1/3 cup tapioca flour (sometimes called tapioca starch)
1 teaspoon xantham gum*
- Methods / Steps
Combine all ingredients in a large bowl, whisking to create a blended mixture. Cover and store or use cup for cup in recipes that call for flour.
*this gum is pricey but well worth it if you plan on baking more gluten free and you will need to add a little more to recipes outside of what is in this baking blend...for example, a cookie might require 1/4 to 1/2 of a teaspoon more xantham gum. Cakes or quick breads need more such as 1/2 to 3/4 teaspoon more and breads or yeasted doughs could require up to 1 teaspoon of more xantham gum. - Additional Tips
