Simple ingredients that you probably have in your cabinet now, this dip is great to serve with veggies or crackers.
Legumes are a great way to add fiber to your diet. Just a half cup of lentils contains 8 grams of fiber!
2-1/4 cups green lentils
1 large onion, chopped
3 cloves garlic, crushed
1 teaspoon crushed or flaked sea vegetable
1 package frozen chopped spinach
2 tablespoons olive oil
sea salt & pepper to taste
In a medium saucepan, heat olive oil.Sauté the onion and garlic until slightly golden.Add lentils. Add enough water to cover lentils plus one inch.
Bring to a boil; turn down to a simmer.Cook for 30 minutes; check to ensure there is sufficient water. Cook for another 10 minutes.While lentils are still cooking, add the spinach on top of the lentils. Wait 10 minutes, add sea vegetables, then stir thoroughly. Cook for another 10 minutes (for a total of 1 hour)
Serve over brown rice.
