Cherry & Almond Ricotta

This yummy snack makes a great brunch dish or quick snack. It combines healthy cherries with filling protein from the ricotta and contains heart-healthy fats found in almonds. Lemon zest even adds benefits for the body, while brightening the flavor for the palate.

  • Ingredients
    • 1 cup pitted cherries, preferably fresh and local (or organic)

    • 1-2 tablespoons chopped or slivered raw almonds

    • 1 generous cup low fat ricotta cheese (or cottage cheese if you prefer

    • zest of half of a lemon (organic and/or well washed)

    • 2 to 4 teaspoons organic sugar or sweetener of choice

  • Methods / Steps
    • Sweeten the ricotta to taste, and place the ricotta in a bowl(s.)

    • Top with the cherries, slice in half, and scatter the almonds over the top.

    • Sprinkle with lemon zest, and serve immediately.


    You can also stir the cherries and almonds in with the ricotta, making a fool sort of mixture, and chill until ready to serve. Top with the lemon zest and enjoy.
