Carrot Soup

A sweet, hot soup that is rich antioxidants and great to have on a cold day.

  • Ingredients
    • 1 lb. carrots
    • 1 medium onion
    • 6 cups plain soy or almond milk
    • 1/2 tsp. sea salt
  • Methods / Steps
    1. Chop carrots and onions into chunks.
    2. Sweat the onions in some water until just wilted. Stir in the carrots.
    3. Add the milk and sea salt and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until carrots are soft.
    4. Pour the soup into a blender and pure.
