Bean, Potato & Tuna Salad

It doesn't take complicated ingredients to make a filling meal. Make sure to pick a sustainable brand of tuna. Try purple potatoes to really up the nutrients!

  • Ingredients
    • 1/3 cup oil
    • 3 Tbsp. vinegar
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1 can (16 oz.) whole green beans, drained or steamed fresh
    • 2 cooked potatoes, peeled and diced
    • 1 can tuna
    • 1 small onion, sliced thin
  • Methods / Steps
    1. Cook potatoes by steaming or boiling.
    2. Stir together oil, vinegar, salt and pepper. Add remaining ingredients.
    3. Toss to mix. Chill and serve.
  • Additional Tips
    Shrimp, cooked and chilled can be substituted for the tuna.
