

Crunchy, creamy, zesty and fresh tasting, this salad is bright in color and flavor. Full of good for you fats, protein from peanuts and helpful digestive enzymes found in pineapple.
1 cup peanuts
1 small pineapple, cut into small chunks
2 avocados
1 small lime, juiced
1 orange, juiced
cup red onion diced
cup cilantro, chopped coarsely
cup mint, chiffonade
1/3 cup green onions finely sliced
teaspoon sriacha sauce
salt and pepper
Add all ingredients in and mix well.
Let sit for 15-30 minutes before serving.
