Avocado & Pineapple Salad

Crunchy, creamy, zesty and fresh tasting, this salad is bright in color and flavor. Full of good for you fats, protein from peanuts and helpful digestive enzymes found in pineapple.

  • Ingredients
    • 1 cup peanuts

    • 1 small pineapple, cut into small chunks

    • 2 avocados

    • 1 small lime, juiced

    • 1 orange, juiced

    • cup red onion diced

    • cup cilantro, chopped coarsely

    • cup mint, chiffonade

    • 1/3 cup green onions finely sliced

    • teaspoon sriacha sauce

    • salt and pepper


  • Methods / Steps

    Add all ingredients in and mix well.

    Let sit for 15-30 minutes before serving.
