HOT TOMATO SAUCE
1 tbsp. oil
1 onion, finely chopped
2-3 cloves garlic, finely chopped
1-1/2 cups tomatoes, mashed, with juice
2 tbsp. tomato purée (paste)
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground chili peppers
pinch of sea salt
Heat oil in a saucepan. Add onion and garlic and sauté until soft.
Add remaining ingredients. Simmer until thickened.
Serve over whole grain noodles (whole wheat pasta, spelt pasta, brown rice pasta, etc.)
WHITE SAUCE
This recipe provides a zero-cholesterol alternative to the traditional "heart-attack-on-a-plate" cream-sauce.
1 cup raw cashews
2½ cups water
½ tsp. sea salt
½ tsp. onion powder
2 tsp. arrowroot powder
1 tbsp. nutritional yeast
In a blender, combine the cashews and 1 cup of water. Blend until smooth.
Add the remaining water and the other ingredients. Blend again.
Pour the mixture into a saucepan. Bring to a boil, stirring constantly until sauce reaches a thick and creamy consistency.
Serve over pasta, vegetables, rice, or potatoes.
