Against the Grain

Our first step was a gluten free diet.  Gluten free has seemed to be moderately successful.  Hubby’s tummy problems have seemed to slowly disappear.  But, at times it seems as though gluten free just isn’t enough, hubby has still had this horrible time with his tummy.  So, I began to research other diets in order for gut healing.

Diets such as gluten free, grain free, casein free, and sugar free and known to help the intestinal wall of the gut heal.

These days more and more people are getting diagnosed with diseases such as Celiac disease, and if not Celiac, leaky gut syndrome.  What is leaky gut syndrome? Leaky gut is when the wall of the intestines becomes damaged, and food particles and toxins seep directly into the blood rather than going through the digestive process.  This seeping of undigested and unabsorbed particles can trigger an immune system response which can cause symptoms like gut pain, fatigue, in some cases constipation, as well as other problems.

Many people cringe when they think of being on a gluten free diet, and they really shudder when they think of being on a grain-free diet.  But, in many cases being on these diets for a portion of the time can heal your gut problems, if they are not too severe.  And, if they are severe this diets can help relive uncomfortable symptoms, and help your body operate in the best condition possible.  I continue to remind my hubby that if he stays on this diet for awhile, it may heal his gut completely and he can go about eating a “normal” diet.  Plus, it never hurts to learn how to cook differently in order to cater to house guests who have dietary restrictions.

In the book Against the Grain: Delicious recipes for a Whole Food and Grain-Free Diet the author, Kate Tietje makes Grain free dieting tasty and simple.   The book comes complete with many yummy pictures to go along with the yummy recipes.  Eating Grain Free doesn’t have to be boring.

Here’s a super yummy recipe to try out.  Once you try this ..
