The term "gluten-free", commonly associated with a gluten-free diet refers to foods that exclude gluten, a protein which is found in wheat. It can be used as a food additive to either flavor or stabilize foods and avoiding this protein is the only medically accepted treatment for individuals suffering from celiac disease.
