Ingredients:
- 1 cup pitted cherries, preferably fresh and local (or organic)
- 1-2 tablespoons chopped or slivered raw almonds
- 1 generous cup low fat ricotta cheese (or cottage cheese if you prefer
- zest of half of a lemon (organic and/or well washed)
- 2 to 4 teaspoons organic sugar or sweetener of choice
Steps/Methods:
- Sweeten the ricotta to taste, and place the ricotta in a bowl(s.)
- Top with the cherries, slice in half, and scatter the almonds over the top.
- Sprinkle with lemon zest, and serve immediately.
You can also stir the cherries and almonds in with the ricotta, making a fool sort of mixture, and chill until ready to serve. Top with the lemon zest and enjoy.
